This Healthy Broccoli Cheddar Soup Packs All Your Veggies into One Bowl

If you’ve been around for awhile, you’ll know that I’m on a never-ending quest to find ways to eat my vegetables without eating a salad. Basically, I want all the nutritional benefits of my veggies—without feeling like I’m just eating vegetables. Especially during Chicago’s bone-chilling winters, the last thing I’m craving most nights is a bowl of vegetables when I can cozy up to a recipe that truly satisfies. Thankfully, this healthy broccoli cheddar soup checks all the boxes.

IMHO, broccoli cheddar soup is the best soup. While followed closely in my rankings by tortellini/lasagna soup, baked potato soup, then tomato soup, a broccoli cheddar wins my heart every time. It’s rich and creamy, cozy and savory, while having just a bit of texture from the broccoli. There are certainly different versions out there. Some lean thick and creamy with all of the broccoli blended, while others have more of a cheesy broth with bigger florets keeping more texture. My version for a healthy broccoli cheddar soup leans on the brothier side, but still maintains that warm creaminess and flavor while being absolutely packed with vegetables.

  • Olive oil
  • Onions

How to Make Healthy Broccoli Cheddar Soup

The best thing about this soup is that it’s a one pot meal that comes together with relatively little effort. It does involve a bit of chopping, but once you get everything prepped – which you can certainly do ahead of time – this soup comes together in about 30 minutes. Saute your vegetables with the spices for a bit to caramelize the flavors a bit, then add the broth and simmer until the vegetables are tender. Add your milk, then using an immersion blender, blend a bit of the soup to add a bit of thickness to the texture. Because I skip the step of adding flour as a thickener, blending a portion of the soup helps to add a bit of that creamy texture to the soup without having to make a roux. Then all you have to do is add your cheddar and kale at the end and you’re ready to serve!

Because there’s so many vegetables in this soup, I like to prep each one differently so that it doesn’t just feel like a vegetable soup and the textures can all stand on their own. You can of course omit any of these vegetables if you prefer or substitute with what you have on hand, but I find these vegetables to work well together.

  • Celery: Personally, I’m not a huge fan of celery in soup in most cases. But it makes for a great base, so I just like to chop the celery stalks very finely so that they can melt down with the onions in the mirepoix at the beginning of the cook time.
  • Carrots: I like to cut the carrots into thin rounds for this soup for the visual color they add. But you can also chop the carrots extra fine like the celery so that it melts more into the soup.
  • Zucchini: This is the easiest vegetable to add to almost any recipe to help add extra veggie content. Especially with soups, I like to shred the zucchini and add it to the carrots, onion, and celery at the beginning of cooking. I’ve made plenty of soups where I’ve added in shredded zucchini and no one even realized it was in the bowl.
  • Cauliflower and Broccoli: Cut and break apart the florets into the smallest possible pieces for this soup. Not only do they cook faster when you’ve broken the florets down, but the smaller pieces fit better onto a soup spoon, especially because I don’t blend the entire soup together.
  • Kale: Leafy greens are another easy way to bulk up the nutritional value of soups. Whether you prefer spinach or kale, chop the leaves into very thin pieces so they easily meld into the soup.

How to Serve and Store Leftovers of this Soup

Serve this soup piping hot! I like to top the soup with additional shredded cheddar cheese, lots of black pepper, and served with a big hunk of crusty bread for soaking up the broth. Because this soup is packed with ingredients, it doesn’t need a ton of frills and toppings to make it feel complete.

To store leftovers, let the soup cool then store in an airtight container in the fridge or, cool completely and store in freezer bags/containers. I prefer to reheat soup on the stove, so when ready to reheat, just add to a stovetop pot with extra broth if needed and bring up to a simmer before serving.

Description

This easy veggie packed broccoli cheddar soup makes a healthy and cozy dinner.


  • 2 tbsp olive oil
  • 1/2 yellow onion, finely chopped
  • 3 stalks celery, finely chopped
  • 2 carrots, sliced into rounds
  • 1 1/2 tsp smoked paprika
  • 1 tsp black pepper
  • 1 tsp fresh thyme leaves
  • 2 large cloves of garlic, chopped
  • 1 large zucchini, shredded
  • 1 large head of broccoli, cut into small florets
  • 1/2 head of cauliflower, cut into small florets
  • 1 32oz container of vegetable broth
  • 11 1/2 cups milk of choice, room temperature
  • 2 cups shredded cheddar cheese
  • 2 cups finely shredded kale
  • juice of 1 lemon

  1. In a large stove top pot, add the oil and bring up to a medium heat. Add the onion, celery, carrots, and a big pinch of salt. Saute for a few minutes until the onion has started to become translucent.
  2. Add the paprika, pepper, thyme, garlic, and zucchini to the pot. Stir to combine, and cook for another few minutes until the vegetables begun to just turn golden and become fragrant.
  3. Add the broccoli and cauliflower florets and stir to combine. Add the broth. Bring up to a simmer, then cover the pot and let cook for about 10- 12 minutes, until the broccoli and cauliflower are tender.
  4. Add the milk and stir to combine. Using an immersion blender, blend a portion of the soup to desired thickness. If using a blender, take about 2 cups of the soup and add to a blender. Carefully vent and blend the soup until thick. Add back to the pot and stir to combine.
  5. Add the cheddar cheese to the pot, and simmer soup until warmed through and the cheddar has melted.
  6. Add the kale to finish the soup and stir to combine. Adjust salt to taste, and add lemon juice.
  7. Serve hot. Enjoy!

  1. Pre-cut Vegetables: When I’m really in a time crunch, I’ll grab pre-cut veggies at the grocery to save some prep time. This sheet pan harvest hash with sausage and sweet potatoes is a simple and healthy dinner that’s low-carb, paleo, whole30, and gluten-free.


  • 1 sweet potato
  • 1 pound Brussels sprouts
  • 2 yellow bell peppers, ribs and seeds removed
  • 1 red onion
  • Extra-virgin olive oil
  • Kosher salt and freshly ground black pepper
  • Garlic salt
  • Italian seasoning
  • 1/2 pound Italian sausage, casings removed
  • For garnish: goat cheese crumbles and Italian parsley

  1. Preheat oven to 400 degrees.
  2. Chop vegetables in 1 – 2” pieces and place on a baking sheet. Toss with olive oil, garlic salt, pepper, and italian seasoning, then spread out in an even layer and roast for 30 minutes, tossing halfway through.
  3. Meanwhile, sauté Italian sausage in a skillet over medium-high until cooked through. Use the back of a wooden spoon to break it up into large chunks.
  4. Remove the baking sheet from the oven, sprinkle the Italian sausage over the top, then make 4 indentations in the vegetable mixture. Crack an egg into each indentation, season each egg with salt and pepper, and place back in the oven for 10 minutes until eggs are cooked to your liking.
  5. Remove pan from oven and top with Italian parsley and goat cheese crumbles. Serve!

How does caffeine impact hormones?

The link between caffeine and hormones is complicated. It’s not as black-and-white as drinking caffeine or abstaining completely. We are all bio-individuals, after all! Caffeine impacts each of us differently. However, observational studies indicate the following:

Caffeine and cortisol: Caffeine can temporarily increase cortisol, our stress hormone. While a moderate rise (in the morning) is part of the body’s natural response, excessive caffeine intake may lead to prolonged elevated cortisol levels, potentially impacting hormonal balance.

Caffeine and insulin: Caffeine can also affect insulin sensitivity (aka blood sugar balance). This is particularly relevant for those with PCOS, as insulin resistance is a common condition.

Caffeine and estrogen: Battling estrogen dominance? If so, you may want to aim for minimal-to-moderate caffeine consumption. After all, too much caffeine can affect estrogen levels, potentially exacerbating hormonal imbalances—especially for Asian women. One study shows that higher caffeine consumption is associated with higher estrogen levels in women of Asian descent.

If you have a hormonal imbalance, should you avoid caffeine?

Depends. Although most experts suggest minimizing caffeine to alleviate hormonal imbalance symptoms, moderate daily consumption (1-2 cups of brewed coffee) is generally considered safe. In other words, despite individual responses to caffeine, many people can enjoy moderate amounts without adverse effects. If you’re actively trying to balance hormones, or have specific health concerns, monitor your caffeine intake with a healthcare professional.

What is the best time of the month to drink caffeine?

Assuming caffeine consumption is on the docket—and hormone balance is the goal—let’s dive into cycle syncing caffeine. In many ways, the first half of your cycle (the follicular phase), is an ideal time to drink java. During this phase, estrogen levels are on the rise. And this can contribute to better tolerance and reduced sensitivity to caffeine. Said differently: if you have a normal follicular phase, go for it.

Conversely, during the second half of the menstrual cycle—the luteal phase—estrogen decreases while progesterone rises. Because of this, some women experience heightened sensitivity to caffeine during this phase. This can lead to potential disruptions in sleep patterns or increased feelings of anxiety.

Play around with adjusting your caffeine consumption throughout the month. You may be pleasantly surprised by the benefits of limiting your intake before your period starts.

Caffeine Consumption, Broken Down By Phase

To take things one step further, below are general suggestions for caffeine consumption during each phase of the menstrual cycle.

  1. Menstrual phase (Days 1-5): Generally speaking, hormone levels are low during this phase. It’s a good time for regular caffeine consumption—if you’re used to it. However, some women experience increased sensitivity to caffeine during their periods. Listen to your body and adjust accordingly.
  2. Follicular phase (Days 6-14): As mentioned, hormones (particularly estrogen) start to rise during this phase. Therefore, caffeine may have a milder impact on your body’s stress response. It can be a good time for moderate caffeine consumption, as energy levels are likely to be more stable!
  3. Ovulatory phase (Days 15-17): Estrogen peaks during ovulation. Caffeine sensitivity may be lower, and energy levels higher. However, excessive caffeine intake can still contribute to jitteriness or disrupt sleep.
  4. Luteal phase (Days 18-28): As progesterone increases, some women experience heightened sensitivity to caffeine. In fact, symptoms like anxiety or breast tenderness can be exacerbated by excessive caffeine. Now’s the time to opt for lower-caffeine alternatives.
  5. Premenstrual phase (Days 25-28): This phase is characterized by hormonal fluctuations and potential mood changes. Hello, PMS. Consider reducing caffeine or sipping herbal teas before your period starts.

Hormone-Loving Ingredients to Add to Your Coffee

How can you further support your hard-working hormones? Drink your coffee after you’ve had a blood sugar-friendly breakfast. Also, make sure your beans are high-quality, organic, and tested for impurities (Purity Coffee is a house fave!). Last but not least, consider adding the following ingredients to your cup:

Collagen

Cinnamon

Cinnamon adds flavor and has potential benefits for insulin sensitivity.

Adaptogens

Consider adding adaptogens, like ashwagandha or maca, for their potential stress-reducing and hormone-balancing properties. Start with a small amount and adjust based on your preference.

Is matcha better than coffee for hormone balance?

Similar to the complex web between caffeine and hormones, comparing matcha to coffee—in terms of hormone balance—is equally nuanced. However, matcha contains L-theanine, an amino acid that promotes a more gradual release of caffeine. In turn, this can potentially minimize the abrupt spikes and crashes associated with coffee. While some women find matcha gentler on their reproductive system, others tolerate coffee well. At the end of the day, moderation is key, regardless of the source.

After graduating Alpha Omega Alpha from the Medical College of Georgia School of Medicine, Dr. Steven Gundry completed residencies in General Surgery and Thoracic Surgery at the University of Michigan and served as a Clinical Associate at the National Institutes of Health for years. Dr. Gundry is the author of numerous books, including Dr. Gundry’s Diet Evolution, The Plant Paradox, The Plant Paradox Cookbook, and his latest, Gut Check.

Can you distill gut health to its core definition and highlight why we should prioritize it?

25 hundred years ago, Hippocrates, the father of medicine, said that all disease begins in the gut. I’ve spent the last 25 years finding out how right he was!

The complex ecosystem of bacteria, fungi, and worms (yes, worms) that live in our intestines (the microbiome) communicates via a “language” to all cells in our body and controls most functions that we take for granted, even our emotions and hormones. We have systematically starved and poisoned this integral partner of our health with antibiotics. [Ones] that we take, or that are fed to animals that we eat, or are sprayed on so many of our grain crops. 

Furthermore, as the saying goes, “Good fences make good neighbors.” As much as we are dependent on our microbiome, they need to stay on their side of the gut wall—a single-cell thick layer that has the same surface area as a tennis court. When this wall is damaged, it results in “leaky gut,” which allows food particles and bacteria to pass through the fence, resulting in inflammation. [My book] Gut Check shows how this happens to most of us and how to fix it.

Once someone commits to healing their gut, how long does it take to experience true transformation? What would that look and feel like?

For most of my patients, it takes 6-12 months to heal leaky gut and to restore the complex gut microbiome diversity. We can measure these changes using simple blood tests and watch the progress. Thankfully, within a couple of weeks, most patients notice important changes in how they feel, their bowel movements, their mood, etc.

You explain that it’s not what we eat, but our ability to digest and process beneficial nutrients that matters. What are concrete, actionable ways we can improve our body’s processing system? 

After 25 years of measuring these changes every 3 months in my patients, I can say that removing wheat, rye, barley, oats, corn, and other pseudo-grains from the diet is a great start. 100% of my patients with leaky gut have antibodies to the various components of wheat and grains. By following this program, these issues are resolved and disappear.

You write that “working closely with my patients to restore their gut biome and gut wall leads to remarkable health transformations, healing […] Alzheimer’s disease and dementia […].” To confirm, are Alzheimer’s and dementia reversible through healing the gut?

There is increasing evidence that memory loss, Alzheimer’s, Parkinson’s, and neuropathy begin in the gut. As I write in the book, “leaky gut equals leaky brain!” In my experience, there is a point where these changes can be stopped and reversed if caught early enough, but sadly, less is possible the longer treatment is delayed. 

You offer a comprehensive Gut Check Food Plan. Is this indicative of an ideal eating plan if healing your gut is your goal? How much “wiggle room” is there to stray from the plan while still keeping your gut generally healthy?

My food plan reflects what I’ve learned from my patients’ habits and blood work over the past 25 years. While I have many very motivated and “perfect” patients, most, including myself, stray from time to time. So, the less you “cheat,” the faster you heal.

What is your stance on prebiotic and probiotic supplementation? Do you have favorite brands/products for supporting gut function?

I have learned that there are multiple ways to restore the gut ecosystem including probiotics and prebiotics. But what surprises most people is that it’s the postbiotics primarily from fermented foods that make the real difference. In other words, plain yogurts and kefirs, low-sugar kombucha, vinegars, black coffee, tea, and even extra-dark chocolate, red wine, and aged cheeses are all great sources of postbiotic-containing foods.

Your book comprehensively covers the process of healing your gut. How would you encourage someone to take to begin this journey in the most efficient, optimized way?

Two simple steps: maximize your Vitamin D3 intake to at least 5,000-10,000 IUs a day, and remove grains and pseudo-grains from your diet. And, for more dos and don’ts, follow the “yes please” and “no thank you” lists in Gut Check.

I think the trend of snack cakes—single-layer cakes with a fun drizzle or frosting—is fantastic. It means that you always have a dessert on hand or something to serve guests. And this snack cake bakes so easily, it’s the perfect thing to make on a weeknight—or whenever a sugar craving strikes.


for the cake:

  • Olive oil spray
  • 2 large pasture-raised eggs
  • 1/2 cup unsweetened goat milk yogurt
  • 1/2 cup allulose
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 teaspoons almond extract
  • 1 cup blanched almond flour
  • 1/2 cup natural unsweetened cocoa powder
  • 1/4 teaspoon iodized sea salt
  • 1/2 teaspoon baking soda

for the drizzle:

  • 1/4 cup pistachio butter
  • 1/4 cup unsweetened goat milk yogurt
  • 1/8 cup allulose
  • 1/4 teaspoon ground cinnamon
  • Zest of 1 orange or tangerine

  1. Preheat your oven to 325 F. Grease an eight-inch cake pan with olive oil spray and set aside.
  2. In a large bowl, whisk together the eggs, yogurt, allulose, vanilla extract, and almond extract.
  3. In another bowl, whisk together the almond flour, cocoa powder, salt, and baking soda. Fold the dry ingredients into the wet ingredients and stir until well combined. Pour the batter into the prepared cake pan. Bake at 325 F until a toothpick inserted into the center of the cake comes out clean, 30 to 35 minutes. Remove from the oven and let cool.
  4. While the cake is cooling, make the drizzle: Whisk together the drizzle ingredients and keep stirring until the allulose has melted into the mixture and is no longer granular. Drizzle over the room temperature cake and serve.
  5. Store the leftovers (if there are any!) in the fridge for up to 5 days.

Yes, It’s Normal For Your Libido to Fluctuate

Just as every person’s taste buds, cravings, and appetites differ, so does sex drive. We are all unique in this world—our sex drives are a reflection of our bio-individuality. “I know the selection of peach may feel like a surprise, but after the chaos of the world, the stress, the anxiety, the heaviness—peach doesn’t add to that noise,” says Joshua Smith, Principal and Founder of Joshua Smith Inc. “Rather, it’s uplifting, connecting, and is about lightening up and not being so serious.”
